Monday is Meal Planning Day!

I’m taking part in the Plan It-Don’t Panic Meal Planning Challenge over at Keeper of the Home.
Check out my Gluten-Free and Feingold Diet-friendly (stage 2) meal plan for this week and then head over the link above for some more inspiration.
Only breakfasts and dinners are planned. Lunches are thrown together quick between homeschooling lessons. I keep a list of simple and nourishing lunch ideas that I choose from that you can see here. I also have some great quick and nutritious snacks that I keep prepared and ready to grab and go.
I don’t have any recipes posted on the blog yet, so if you would like a recipe let me know in the comment section and I’ll get it posted as soon as I can.
Breakfast: fried eggs, bananas
Dinner: Mama’s Italian Beef Soup, tossed salad
Breakfast: baked oatmeal (gluten free oats)
Dinner: Lemon-Thyme Roasted chicken, mashed cauliflower, tossed salad
Breakfast: dutch puff
Dinner: chicken and veggie fried rice (using chicken leftover from Tuesday)
Breakfast: strawberry banana yogurt smoothies
Dinner: veggie frittata (breakfast for dinner), sliced tomatoes
Breakfast: hardboiled eggs and fresh fruit
Dinner: Pizza for the family (non-GF), leftovers for mom
Breakfast: homemade gluten free waffles, fresh fruit
Dinner: (leaving it open this week since hubby has the weekend off work…we might be spending the evening with friends)
Breakfast: crustless broccoli quiche
Dinner: crockpot roast, roasted vegetable medly
