Monday is Meal Planning Day! 10/3/11

Another Monday Meal Plan to keep up with the Plan It, Don’t Panic Meal Planning Challenge at Keeper of the Home.

 

Even though I love having our meals planned out and I totally ascribe to the benefits of meal planning when it comes to saving time and money, I have struggled with the motivation to plan for this week.  Last week’s plan only came partially to fruition due to some poor shopping on my part and a crazy work schedule on hubby’s part.  So some of the meals I planned for last week, but didn’t end up doing, will be recycled to this week’s plan.  Let’s see if I can stick with it for the full week this time.

Here is our  menu for this week.  All of our meals are gluten free and Feingold diet friendly (stage 2).

 

Monday

Breakfast: Scrambled eggs, fruit

Dinner: Italian beef soup, GF flatbread, tossed salad

 

Tuesday

Breakfast: Baked oatmeal

Dinner: Spaghetti squash and meat sauce, steamed broccoli

 

Wednesday

Breakfast: veggie frittata

Dinner: Roasted chicken, roasted veggies

 

Thursday

Breakfast: Yogurt and fruit smoothie

Dinner:  White chili, sauteed zucchini

 

Friday

Breakfast: Hardboiled eggs and fruit

Dinner:  Homemade Pizza, raw veggie sticks

 

Saturday

Breakfast: Homemade waffles

Dinner: Soup and salad

 

Sunday

Breakfast: Scrambled eggs and fruit

Dinner: Crockpot beef roast, mashed potatoes w/gravy, green veggie
