Simple Crockpot Beef Roast

A 2 to 4lb beef roast, (depending on your needs and the size of your crockpot). I have used chuck roast and rump roast with great results.
Make a rub with salt, pepper, fresh garlic or garlic powder, oregano, thyme and rub very generously all over the roast.
Drop in a quartered onion, couple of sliced carrots and some quartered red potatoes with the roast, if you wish.
Cook on low for about 6 hours.
Cooking a roast in the crockpot creates a good amount of flavorful “juices” that can be used to make a wonderful gravy by thickening with arrowroot flour, cornstarch, whatever your preferred thickener is.
Just transfer the juices to a saucepan over med-high heat.
In a small bowl, mix the arrowroot/or cornstarch/or other thickener of choice (start with 1 TBS) with a small amount of water and stir until there are no lumps.
Add the mixed thickener to the meat juices in the saucepan and whisk continuously until thickened. You may need to add more thickener depending on how much liquid you have to turn into gravy. Remember to mix the starch or flour with a small amount of water first. If you put it directly in the saucepan you will have lumpy gravy.
