Monday is Meal Planning Day! 11/7/11

This is the final week of the Plan It, Don’t Panic meal planning challenge that I’ve been taking part in over at Keeper of the Home. I haven’t decided yet whether I will continue posting my weekly menus after this or not. It is kind of moot, I think, since I tend to rotate many of the same things over and over. If you’ve seen my last 5 weeks of meal plans, you’re probably not going to see anything new unless I do a major change up of my list. In reality, I like the simplicity of my system and don’t forsee any changes in the near future other than the occasional nicer meal for special occasions.
I’m going to be hard at work getting more recipes posted soon, so be on the look out for those. My rules of simplicity reign, so if you want something that is easy, nutrient dense and delicious be on the lookout for the recipes to come.
On to my weekly menu. As always, all of my meals are made to accomodate my gluten intolerance and other food issues and are acceptable on the Feingold Diet (stage 1). For lunch and snack ideas, see my lists here and here.
Breakfast: dutch puff with warm honey drizzle, pears
Dinner: Leftover chicken noodle soup, tossed salad, coconut flour muffins
Breakfast: Baked oatmeal
Dinner: Bunless burgers, sauteed broccoli and onions
Breakfast: scrambled eggs, homemade turkey sausage
Dinner: Roasted chicken, roasted winter squash
Breakfast: Yogurt and fruit smoothies
Dinner: White chicken chili, salad
Breakfast: Crustless chicken and veggie quiche
Dinner: Homemade macaroni and cheese, raw veggie sticks
Breakfast: Homemade gluten free waffles
Dinner: Roasted butternut squash soup and salad
Breakfast: Hardboiled eggs and fruit
Dinner: Crockpot beef roast, vegetable medley (whatever is left over from the week, sauteed together) =-)
