Chocolate Chip Peanut Butter Bars, Gluten Free

This recipe seems a bit inappropriate on the heels of my last post, but since I know we all have times when treats are needed I wanted to share this especially yummy one.


These bars are definite crowd pleasers.  They are one of my go-to desserts whenever I need to bring a treat to a party or event.  They are super simple to make, gluten free and can be made Feingold diet friendly as well.


My recipe is based on the Breadbeckers Rich Peanut Butter Bar recipe which I used for years when I was grinding my own fresh wheat. Since I’ve started eating gluten free, I’ve made a few substitutions and additions in order to be able to continue making this favorite treat.


Chocolate Chip Peanut Butter Bars


1/2 cup butter

1/2 cup natural peanut butter

1  1/4 cup sucanat

1 tsp vanilla extract

2 eggs

1 cup *gluten free flour

1  1/2 tsp baking powder

1/2 tsp salt

1  1/2 cups chocolate chips (I use Enjoy Life brand)


*I usually use my favorite GF flour mix and get rave reviews.  I have also made these with Bob’s Red Mill All Purpose Baking Flour with very good results.



Melt the butter.

Mix the melted butter and peanut butter together.

In separate bowl beat the eggs, sucanat and vanilla extract together.

Add to the butter/peanut butter mixture and stir to combine.

Sift in flour, salt and baking powder and mix well.

Stir in chocolate chips.

Bake at 350 degrees in a greased 9 x 13 pan for 30 to 35 minutes.
