Simple Roasted Chicken

I was surprised to realize that I hadn’t posted my favorite dish here yet.  I just love a good roasted chicken.  It is so easy to make and so delicious.

You can pick and choose whatever seasonings, herbs, spices you’re in the mood for.  My current favorites are garlic/rosemary or lemon/thyme.  Clipping fresh herbs from the garden makes this dish extra special, but dried herbs work wonderfully as well.



1 whole chicken (neck and organs removed)

2 to 3 TBS olive oil

1  1/2 tsp salt

2-3 cloves of garlic, crushed

2 – 3 sprigs fresh rosemary (or 2 tsp dried)



In a small bowl mix together the olive oil, salt, garlic and rosemary.

Rub this mixture all over the chicken, under the skin and in the cavity.

Place chicken in a roasting pan and brown in the oven at 450 degrees F for 20 minutes.   (I always cook my birds breast side down to prevent the breast meat from being dry).

Turn heat down to 375 degrees F and roast until cooked thoroughly, about an hour.  A thermometer stuck into the meat should read 180 degrees F.

Let the chicken rest for 15 minutes or so before serving.  Enjoy!

  1. Hilarious! On my to-do list for this morning was “look up how to roast chicken” and there you were in my inbox. We eat roast chicken a lot at my house, but it’s on Sundays and my husband likes to do it so I haven’t in a while. I need to make some extra stock for my freezer pre-baby, so we’re breaking out of the Sunday mold. Thanks for the recipes!
