Homemade Vanilla Extract

If you aren’t already making your own vanilla extract, you have got to put it on your “to-do” list. Seriously, it is the easiest thing to do, saves you a ton of money and the flavor results are far above anything you can buy at a grocery store.
The most difficult thing for me was to go to the liquor store to buy the vodka. :-P Any vodka will do. You can also use bourbon, rum or brandy. I found a potato vodka that I used for my last batch to be sure to keep it 100% gluten free. I’ve read conflicting information on whether a grain-based vodka has trace amounts of gluten in it so I wanted to be safe.
The ratio of vanilla beans to alcohol that I use is 5 beans per 8 oz. Use a sharp knife to split the vanilla beans lengthwise Place in a glass jar or bottle with the vodka. That’s it!!
Keep the jar in a cool, dark place and remember to give it a little shake once a week or so. The length of time until the vanilla extract is ready really depends upon personal preference. I like to let mind steep for about 6 months as I find the flavor is enhanced with the longer steeping time, but many people start using theirs after 8 weeks.
